Aromatic Vegetable Pulao

A one-pot fragrant rice dish studded with colorful vegetables and warm spices.

Ingredients

  • 2 cups The Long Grain Co. Steam Basmati Rice
  • 1 cup mixed vegetables (carrots, peas, beans, corn)
  • 1 onion, sliced
  • 2 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • 3 cups water
  • Whole spices (bay leaf, cinnamon, cardamom, cloves)
  • 2 tbsp ghee
  • Fresh mint leaves
  • Salt to taste

Instructions

    Wash and soak rice for 20 minutes. Drain.

    Heat ghee in a pot, add whole spices and sauté until fragrant.

    Add sliced onion and cook until translucent. Add ginger-garlic paste and green chilies.

    Add mixed vegetables and stir for 2 minutes.

    Add drained rice and gently stir to coat with ghee.

    Add water and salt. Bring to a boil, then reduce heat to low.

    Cover and cook for 15 minutes until water is absorbed and rice is fluffy.

    Garnish with fresh mint and serve.
